Try cooking your ENTIRE meal in aluminum foil on the grill. Cooking you food in packets like this allows each member of your family to personalize their meal. It’s also a quick way to enjoy your favorite meat and potatoes meal with half the work! Try making a salmon, green bean and new potato packet for a light summer dinner with bright flavors. Whip up a salad and you’re ready to eat like kings!

Salads are always a no brainer for a light cool dinner on a hot summer night but try mixing it up by trying a new salad recipe wrapped in pita or naan. IF you’re worried about not having enough protein, you can add your favorite protein powder, chia seeds, almond butter or pumpkin seeds.

Sandwiches

It may seem like a cop-out but sandwiches are a great option, especially on nights when you want to avoid going out to eat but you’re in a time crunch. Growing up, I remember nights when mom would make BLTs. There is nothing like fresh veggies, bacon and crispy bread! Nowadays, I have been known to make egg sandwiches or this vegan “tuna fish” salad.
